This "Server" version is the same as the standard edition of Ubuntu - but without a graphical user interface (GUI). That means access is through the command-line only, which frees up resources for server usage but means it is *not* ideal for any other role. The 18.04 edition is also a long-term support edition of Ubuntu, meaning that it is maintained in a similar fashion to the latest release but for a longer period of time.
